Rum and raisin bundt cake
Another from SWEET cookbook and using that bottle of rum which was purchased in Cuba last year. Raisins were macerated in the rum for a few days (and it was tempting to make an ice cream) but the icing had a tablespoon of rum which added some delicious flavour). Maybe an adult dessert!
